Guide to a Succesful “Friendsgiving”

Thanksgiving is the holiday when no one can make fun of you for overindulging because chances are they are doing the same. For college students, this is the chance for us to free our minds of school stress, final exams and finally get a decent meal.

Most importantly, this holiday is about spending time with family, creating memories with the ones you love and continuing traditions.

While a large percentage of students travel back to their hometown, there are some who are not able to. But, that doesn’t mean they can’t enjoy delicious Thanksgiving food here in Lubbock. This could be the perfect time to start new traditions with friends and have a “Friendsgiving.”

Although you may not be able to roast a turkey or recreate certain dishes exactly the way they’re made back home, no one will know if you go to your local United Supermarket and purchase those things. For instance, you can buy the turkey, dressing and other dishes that absolutely can’t be burnt accidentally — then just make the rest!

So what are some Thanksgiving dishes? Mashed potatoes, sweet potatoes, green beans, etc.. All these things are easy to make. But what if you don’t know how? We have you covered!

Until Thanksgiving, The Hub@TTU will provide recipes you can make for Friendsgiving. It may not taste exactly like grandma’s recipe but the ultimate goal is to recreate the warm feeling of Thanksgiving by making memories with friends.

Loaded Baked Mashed Potatoes from Home Cooking Memories

What you will need:

 5 lbs. potatoes, peeled and cubed

3 tablespoons butter

3 cups shredded cheddar cheese

3 green onions, sliced

1/2 cup milk

1/2 pound sliced bacon, cooked and crumbled

3/4 cup sour cream

Salt and pepper to taste

Big spoon

Large pot

Baking dish

Directions:

  1. Pre heat oven to 350 degrees. Boil potatoes in lightly salted water until tender. Drain and place in a large bowl. Mash the potatoes with a fork. Add the sour cream, milk, butter, salt and pepper to the potatoes. Mix everything together until creamy, light and fluffy. Stir in 2 cups cheese, bacon, and onion.
  2.  Transfer to a greased baking dish. Top with remaining cheese. Bake uncovered at 350 degrees for 20 minutes or until cheese is melted. Serves 14.
