For Cold Winter Nights

With winter upon us, we all want to curl up under a blanket at home next to a fire with something warm to eat. One of the most popular comfort foods of the south is chicken and noodles. This homemade recipe is pretty simple to follow and will help keep you warm on these cold winter nights.

Chicken and Noodles (serves four)

Ingredients:

1 egg

3 c. flour

1 tsp. garlic powder

1 tsp. salt

1 tsp. pepper

1 lb. boneless chicken breasts

8 c. chicken broth

8 c. water

Directions:

1. Mix egg, 1 c. flour, garlic powder, salt, and pepper in a bowl until it’s a thick paste. Cover a large flat surface with a thin layer of flour and put the thick paste from the bowl on the surface. Slowly add the remaining flour to the paste and knead until it is a dough texture.

2. Once the mixture is a dough texture, spread some more flour over your flat surface and then roll the dough out on the surface until it is as thin as possible without any tears. Once it is completely rolled out, let it dry for about an hour.

3. While the dough for the noodles is drying, bring chicken broth and water to a boil in a large pot. Add the chicken and boil until the chicken is cooked completely through. (Around 15 minutes depending on the size of the chicken breasts.) After the chicken is cooked, turn the heat off, take the chicken out of the broth, and shred or chop it into about 1 inch pieces.

4. Once the dough for the noodles is dry, cut the dough into strips about ½ inch by 3 inches in size.

5. Put the chicken pieces back into the broth mixture and return to a boil. Drop the noodles in the pot one at a time so that they don’t stick together. Let the chicken and noodles cook for 25 minutes and season with salt and pepper to taste.

6. Put the chicken and noodles into bowls and enjoy!
